Preparation: 20 min

Cooking time: 15 min

  • 250 g to 300 g of pasta (spaghetti or farfalle)
  • 100 g to 150 g spinach leaves
  • Black truffle oil
  • Parmesan slices
  • 60g of bacon cut in cube
  • 40 g of unsalted butter
  • 40g of flour
  • 500ml of milk

1- Cook pastas in some slightly salted water.

2- While pasta is cooking, prepare the béchamel:

Melt butter in a medium saucepan over medium-high heat until foaming. Add flour. Cook, stirring, for 1 to 2 minutes or until bubbling. Remove from heat. Slowly add milk, whisking constantly, until mixture is smooth. Return to heat. Cook, stirring with a wooden spoon, for 10 to 12 minutes or until sauce comes to the boil, thickens and coats the back of a wooden spoon.
3- Cook spinach into boiling water, mix them into the béchamel and salt and pepper.

4- Fried the bacon cubes in a frying pan.

5- When pasta is cooked, drain the water with a colander.

6- Then mix pastas and sauce in the pan before to serve it.

7- Arrange the slice of Parmesan cheese and bacon cube on pastas.

8- Pour a dash of truffle oil on the dish.

Bueno Appetito!
