Mash potatoes with black truffles

“Mash potatoes with black truffles is the perfect side dish to cook with your meat or fish. Can also be a delight for vegetarians”

  •  1 kg of potatoes
  • 500 ml of milk
  • 6 / 7 tablespoons of olive oil
  • 20 – 30 g of truffles (fresh or preserved)
  • Salt and pepper
  • Pinch of nugmeg



1- Peel the potatoes, and in the meantime bring a large pot of water to boil.

2- Once the water is boiling add the potatoes and cook them in boiling water for 10-15 min, or until tender.

3- Drain them just after cooking and crush them with a potato masher as fine as possible.

4- Add olive oil and milk little by little until the mush become really smooth.

5- Using a truffle slicer, thinly slice the truffles. Add them to the potatoes and mix well by beating energetically.

6- Season with salt, pepper and nutmeg. Eventually add some black truffles oil for a stronger taste.


Tips and Variations:

  • Serve very hot.
  • Add some black truffle oil for a stronger taste.
  • Mush potatoes with black truffle are an excellent side dish for roast veal.
