INGREDIENTS
- 1 kg of potatoes
- 500 ml of milk
- 6 / 7 tablespoons of olive oil
- 20 – 30 g of truffles (fresh or preserved)
- Salt and pepper
- Pinch of nugmeg

INSTRUCTIONS :
1- Peel the potatoes, and in the meantime bring a large pot of water to boil.
2- Once the water is boiling add the potatoes and cook them in boiling water for 10-15 min, or until tender.
3- Drain them just after cooking and crush them with a potato masher as fine as possible.
4- Add olive oil and milk little by little until the mush become really smooth.
5- Using a truffle slicer, thinly slice the truffles. Add them to the potatoes and mix well by beating energetically.
6- Season with salt, pepper and nutmeg. Eventually add some black truffles oil for a stronger taste.

- Serve very hot.
