“Keep the flavors light and simple with this pasta dish”

Ingredients:
- 250 g to 300 g of pasta (spaghetti or farfalle)
- 100 g to 150 g spinach leaves
- Black truffle oil
- Parmesan slices
- 60g of bacon cut in cube
- 40 g of unsalted butter
- 40g of flour
- 500ml of milk
INSTRUCTIONS :
1- Cook pasta in some slightly salted water.
2- While pasta is cooking, prepare the béchamel:
Melt butter in a medium saucepan over medium-high heat until foaming. Add flour. Cook, stirring, for 1 to 2 minutes or until bubbling. Remove from heat. Slowly add milk, whisking constantly, until mixture is smooth. Return to heat. Cook, stirring with a wooden spoon, for 10 to 12 minutes or until sauce comes to the boil, thickens and coats the back of a wooden spoon.
3- Cook spinach into boiling water, mix them into the béchamel and salt and pepper.
4- Fried the bacon cubes in a frying pan.
5- When pasta is cooked, drain the water in a colander.
6- Then mix pasta and sauce in the pan before to serve it.
7- Arrange the slice of Parmesan cheese and bacon cube on pasta.
8- Pour a dash of truffle oil on the dish.
