HOW TO PRESERVE TRUFFLES
Truffles are perishable goods which must be kept refrigerated at all time.
TO ENJOY YOUR TRUFFLES AT THEIR BEST WE STRONGLY RECOMMEND CONSUMING THEM ASAP.
FRIDGE
They best way to preserve truffles is to wrap them with paper towel and put them into an airtight container such as a glass jar or a sealed plastic bag or box.
Place them in the less cold part of your refrigerator which is usually the vegetable draw/tray.
Truffles will slowly lose water therefore it is necessary to change the paper towel every couple of days or whenever the paper is wet to touch.
In this way it is possible to preserve:
Summer Black truffles for about 15-20 days.
FREEZER
If you have no intention to consume truffles straight away, another possible method of preservation is to freeze them.
Wrap your truffles with paper towel, place them into a sealed plastic bag and put them in the freezer.
Like this truffle can last up to 6 months keeping almost all their original aroma and flavour.
When you want to consume them, make sure to thinly slice them while they are still frozen.
